 Late Summer, Early Fall Delight
 
 Ingredients:
 4 cups grated zucchini
 1/2 cup flour
 1/2 minced green onions
 1/2 cup mayonnaise
 1/2 parmesan cheese, grated
 4 eggs lightly beaten
 1 tps lemon juice
 2 cups apple sauce
 1 cup sour cream
 3 tbsp chives
 
 Directions:
 Mix the first seven ingredients in the order given. Fry on a well-oiled griddle until nicely BROWNED. Serve with applesauce and a mixture of the sour cream
 and chives.
