Russian Tea Cakes


Description:
Melt-in-your mouth cookies

Ingredients:
1 cup butter
1/2 cup confectioners sugar
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1/4 teaspoon salt
3/4 cup pecans, finely chopped
confectioners sugar

Directions:
Cream together butter, sugar, and vanilla. Stir together flour and salt. Blend with butter mixture. Stir in pecans. Chill dough thoroughly (at least two hours).

Preheat oven to 400 degrees. Roll chilled dough into 1 inch balls and place on greased cookie sheet. Bake for 10 to 12 minutes until set, but not brown. Cool slightly, and roll warm cookies in confectioners sugar. Allow to cool completely, and roll in confectioners sugar again.
