Coconut Breakfast Bread


Ingredients:
2 3/4 cups all-purpose flour
1 1/4 cups flaked coconut, toasted
3/4 cups sugar
1 tablespoon baking powder
11/2 cups milk
1/4 cup butter, melted
1 teaspoon coconut extract

Directions:
Preheat oven to 350 degrees. Grease a 9”x 5”x 3” loaf pan.

Combine flour, coconut, sugar, and baking powder in a large bowl. Make a well in the center of the mixture. Combine the remaining ingredients. Add the liquids to the dry mixture and stir until well-moistened. Spoon into loaf pan. Bake for one hour or until toothpick inserted in center comes out clean. Cool for 10 minutes in the pan, then remove and cool completely on wire rack.
