Mika MuffinsDescription: Moist, but eggless muffins Ingredients: Topping: 1/2 cup sugar 1/3 cup orange juice Muffin Batter: 1 cup sugar 1/2 cup butter, softened 1/2 cup oil 1 1/2 cups plain yogurt 4 cups flour 2 teaspoons baking soda 2 teaspoons salt 1 cup raisins 1 cup walnuts, chopped Directions: Cream the butter, oil and sugar. Blend in the yogurt. Combine the dry ingredients and add them to the creamed mixture. Stir just until the ingredients are combined. Stir in the raisins and nuts. The batter will be stiff. Place the batter into regular sized muffin tins. Bake at 350 degrees for 15 minutes. While the muffins are still warm, dip the top of each into the sugar-orange topping.
