Georgia Peach Bread


Description:
What could be better than combining 2 Georgia treasures, peaches with pecans! This delicious bread always brings rave reviews. For a great variation, add some mashed bananas.

Ingredients:
1/2 cup shortening
1 1/2 cups sugar
2 eggs
2 1/4 cups pureed peaches
1 tsp vanilla
2 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
1 cup finely chopped pecans

Directions:
1. Cream sugar and shortening together.
2. Add eggs, mix thoroughly.
3. Add peach puree and vanilla.
4. Add dry ingredients and nuts. Stir until blended.
5. Pour into 2 loaf pans 5 x 9 that have been well greased and floured.
6. Bake at 325 for 55 minutes to 1 hour.
7. Let bread cool for a few minutes before removing from pan.

"Tastes Good"
This recipe produced something more like a pudding than a bread. Very moist, very heavy. Perhaps there was not enough acid in the peach puree to make the soda activate? We used home preserved peaches. None the less, it was actually quite good served hot with whipped cream.
