Zucchini BrowniesDescription: A great recipe and a wonderful use for zucchini when it is plentiful. These hold for about a week in the refrigerator, covered. The icing is heavenly and the brownies themselves moist and tasty! Ingredients: 4 eggs 1 1/2 c oil (veg) 2 c sugar 2 c flour 2 t baking soda 2 t cinnamon 1 t salt 4T cocoa 1 t vanilla 3 c grated zucchini 1/2 c nuts Icing 3 oz cream cheese 1/2 c butter 2 T cocoa 2 c powdered sugar 1 t vanilla Directions: Beat eggs and mix in oil. Sift together flour and sugar, soda and cinnamon. Turn wet ingredients into dry adding vanilla. Add in zucchini and nuts. Butter and flour a 13x9 inch baking pan. Pour batter into pan. Bake at 350 for 25-30 mins. Cool brownies. I find its best to ice the brownies in the pan and keep them fresh in the refrigerator. Enjoy! "Zucchini Brownies" These brownies are, without a doubt, the most delicious I have tasted in quite awhile. They are so moist that they practically melt in your mouth with every bite. They are to die for and my guests send their most heartfelt gratitude to Tori and Dean for this wonderful recipe. "Directions not clear" I found that when I was making the brownie mix,the directions did not tell to mix all the indgredients together so I had to add the rest of the indgredients after everything was mixed. So when it sais sift the flour, soda, and sugar all all the other dry indgredients, then sift together. Everyone who tries them wants the recipe. The only thing I found was that in a 9X13 pan, it required longer baking time. Probably about double.
