Egg Nog Butter Cake

Description:
A festive Holiday must-do! Sprinkle with confectioners sugar or make a light glaze and pour over while the cake is warm.

Ingredients:
1/2 c. softened butter
2 large eggs
1 t vanilla extract
3 c. sifted cake flour
2 1/2 t baking powder
3/4 t salt
1 1/2 c egg nog
1 1/2 sugar
1 t white rum
2 T water

Directions:
Whisk together dry ingredients and set aside. Beat butter until creamy and gradually add sugar, beating until fluffy. Add eggs one at a time. Blend in vanilla and rum. Add butter mixture alternately with egg nog and water, beating until smooth. Alternate blending wet & dry ingredients. Turn into greased and floured 10 inch tube pan. Bake at 350 for 50-55 minutes or until done. Cool in pan for 15 minutes. Remove from pan and top with powdered sugar.
