Trail Mix Muffins




Description:
These simple to make muffins are great for breakfast or an afternoon snack. The whole family will love them.

Ingredients:
2 1/4 c. flour
1 c. Amish Granola (We like Country Lane from Walnut Creek Cheese.)
3/4 c. packed brown sugar
2 t. baking powder
1/4 t. salt
2 eggs
1 c. milk
3/4 c. canola oil
1 1/2 t. vanilla
1/2 c. mini semisweet chocolate chips
1/2 c. chopped peanuts
1/2 c. golden raisins
1/2 c. chopped, dried apricots or cherries

Directions:
Combine the dry ingredients in a mixing bowl. Combine eggs, milk, oil, and vanilla in another bowl. Combine the 2 mixtures until just moistened. Gently fold in the chocolate chips, nuts, raisins, and apricots/cherries.
Fill paper muffin cups 3/4 full and bake for 15-17 minutes in a preheated oven at 375 degrees.
