Fresh Peach Muffins


Description:
These light and flavorful muffins are almost like picking the fresh peaches from the tree!

Ingredients:
1 c. chopped fresh peaches, 1 t. lemon juice, 2/3 c. sugar, 2 c. flour, 3 t. baking powder, 1 t. cinnamon, 1 egg, 1 c. milk, 1/4 c. melted butter.

Directions:
Preheat over to 375 and line a cup cake pan with paper liners.
Sprinkle peaches with lemon juice and 3 t. of sugar and set aside.
In another bowl, blend flour, remaining sugar, baking powder, & cinnamon. In a medium bowl beat the egg until thick. Beat in milk and butter. Stir in peaches. Combine the 2 mixtures until just moistened. Spoon batter into cups and bake for 15-20 minutes.
