Spinach Salad With Warm Bacon Dressing

Everyone loves this one!

Ingredients:
3 Large Eggs
6 oz. baby spinach
3 tablespoons cider vinegar
1/2 teaspoon sugar
1/4 teaspoon black pepper
Pinch of Salt
8 slices thick-cut bacon cut into 1/2 inch pieces
1/2 medium red onion chopped
1 small garlic clove minced

Directions:
Hard boil the eggs and set aside. Place spinach in a large bowl. Stir vinegar, sugar, pepper, and salt together in small bowl until sugar dissolves; set aside.

Fry bacon until crisp. Remove and soak on paper towels to soak up excess fat. Pour bacon fat into bowel, and then return 3 tablespoons bacon fat to skillet. Add onion and cook over medium heat, stirring frequently, until slightly softened. Stir in garlic until fragrant; about 15 seconds. Add vinegar mixture then remove from heat. Working gradually scrape bottom of skillet to loosen brown bits.

Pour hot dressing over spinach. Add bacon, onion, eggs over spinach and serve.

"Wonderful easy fancy salad"
Make your guests think you are a magnifique chef! This salad is so flavorful and easy. It is a great different idea than the regular all the time cold greens salads Jamie I give it **** stars
