Pumpkin Bread


Description:
Not your usual pumpkin bread.

Ingredients:
3 c. Flour
1 1/2 t. baking soda
1/2 t. baking powder
1 t. salt
1 T. ground cinnamon
3/4 t. ground nutmeg
1/2 t. ground allspice
4 eggs
2 c. sugar
3/4 c. canola oil
3/4 c. orange juice
15 oz. pumpkin
2 c. walnuts
3/4 c. craisins
3/4 c. dark chocolate chips

Directions:
Pre-heat oven to 350 degrees. Butter two 8 1/2 x 4 1/2 x 2 1/2 inch loaf pans, then line bottom with parchment paper and butter then dust pans with flour.

Sift flour, baking soda, baking powder, salt, and spices together in a bowl.

In a mixer, beat the eggs and sugar for one minute. Beat in the oil, orange juice and pumpkin. Gradually add the dry ingredients to the batter just until smooth.

With a rubber spatula, stir in the nuts, craisins and chips. Pour the batter into the pan and bake for 1 1/2 hours.
