Coconut Cake


Description:
For the coconut lover ! A favorite at the Historic Inn Tours.

Ingredients:
2 cups, sugar
1 cup, butter
5, eggs
1 t, coconut extract
1 cup, buttermilk
2 cups , flour
1 T, baking powder
1 t, salt
1 cup, coconut

Directions:
Preheat over to 350 F. Grease and flour a 10" tube pan. Mix flour, baking powder and salt together in a bowl.

In a large bowl cream butter and sugar together. Add eggs one at a time; beat well and scrape down bowl. Add coconut extract. Alternately add the dries and the wets, mixing well. Add coconut. Pour into 2 bread pans or one cake pan.

Bake at 350 F for 1 hour.
