Potato Pancakes (latkes)


Description:
Lovely pancakes that are perfect for the celebration of Chanuka or anytime.

Ingredients:
6 medium potatoes
1 small onion
2 eggs lightly beaten
1 tablespoons flour
2 teaspoons pepper
1/4 teaspoon salt
1/2 teaspoon baking powder

Directions:
Peel and grate potatoes, chop onion. Let stand 10 minutes to allow liquid to rise to surface. Remove liquid. Stir in eggs, and add other ingredients. Drop by spoonfuls into a hot, well greased skillet. Brown on both sides and drain on abasorbent paper. Serve with apple sauce, sugar or sour cream.
