Green Chili Egg Casserole


Ingredients:
1/2 cup flour
1 teaspoon baking powder
10-12 eggs
12 ounces chopped green chili (thawed from frozen or drained from a can)
2 cups cottage cheese
Monterey Jack cheese (at least 1 cup)
Butter or spray for pie pan

Directions:
Preheat the oven to 350 degrees. Butter or spray a 9-inch pie pan or 8 ramekins and set aside. In a large mixing bowl, mix together all of the ingredients except for the cheese. Pour the mixture into the pie pan. Top with cheese. Bake for 45 minutes or until a fork inserted in the middle comes out clean.
