Fruit Toasties


Description:
A filling, low fat, healthful, delicious main dish for breakfast. We use the blueberries and raspberries from my garden.

Ingredients:
2 slices cinnamon bread per person
Part skim ricotta cheese (16 ounces serves 5)
Cinnamon, honey
Bananas, blueberries, raspberries, peaches, kiwi
Wheat germ

Directions:
Spread two slices of bread per person with a fairly thick layer of ricotta, sprinkle with cinnamon and drizzle with honey
Make three rows of assorted fruit-I use bananas on the top and bottom row and blueberries and raspberries for the center-sprinkle bananas with wheat germ or brush with lemon juice to prevent darkening. Bake in 400 oven for 10 minutes.
