Drunken Bacon

Description:
A nice serving of bacon without the watchful eye and mess of stove top skillet style.

Ingredients:
12 slices bacon
2 tbls brown sugar
1/8 tsp cayenne pepper
Bottle of Schells Carmel Bock Beer

Directions:
In single layer (there may be slight overlapping)place bacon in large glass or enamel pan. Pour 1/2 bottle of beer over bacon, so that bacon swims (think back stroke with head above water). Sprinkle sugar and pepper over top. Place in oven on 350 indefinitely until breakfast or guests are ready. I do this first and then don't have to worry, but if you get off you groove and need to speed things up be careful about turning temp higher: that carmel bock and sugar will crystallize. A little on the edges is nice, up throughout not so much. Hey, what about the half of that bottle of schells?! The nutty and banana overtones of this hearty malt beverage go great in the drunken waffles, which pairs beautifully with this Midwestern specialty.
