Corn Meal Pancakes


Ingredients:
1.5 cups boiling water
1 cup cornmeal
1 tsp salt
1/4 cup honey
2/3 cup milk
1/2 stick butter
2 eggs
1 1/4 cup flour
1 Tbsp baking powder

Directions:
Mix cornmeal, salt and water together in a large bowl. Let sit for 5 minutes.
Heat milk, honey and butter together in microwave, until the butter is melted.
Let cool until lukewarm.
Beat in the eggs one at a time.
Add flour and baking powder to cornmeal mix then add liquid ingredients and stir together.
Bake on hot sprayed griddle until bubbles appear, turn and bake on the other side.
