Tortilla Breakfast Casserole


Ingredients:
8 large flour tortillas
1 1/2 cups chopped ham
1 lg can chopped green chilis
3 cups shredded cheddar or Colby/jack cheese
8 large eggs
2 cups milk or half & half
1 tsp Adobo or similar Mexican seasoning
fresh cilantro

Directions:
Spray a 9X13 pan with Pam
Cut 8 large flour tortillas into fourths – put a single layer in pan (do not overlap)
Top with chopped ham, canned green chilis and shredded cheese
Repeat with another layer of each
Mix eggs, milk or half & half, and Mexican seasoning
Pour over layers in pan
Top with chopped fresh cilantro
Refrigerate overnight
Bake at 350 for approx 1 hour til puffed and browned.
