Tobey's Melt In Your Mouth Scones


Description:
Crispy on the outside, moist on the inside, these scones are sure to please the most finicky of scone connoisseurs!

Ingredients:
1 3/4 cup flour
3 tablespoons sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/3 cup butter ( 5 tablespoons and 1 teaspoon)
1 egg, beaten
6-8 tablespoons heavy cream
1/2-1 cup dried fruits chop larger fruits such as apricots, nuts, almonds, 1 teaspoon cinnamon with walnuts or mini semi-sweet chocolate chips

Directions:
Heat oven to 400 degrees
Sift flour with sugar, baking powder, and salt. Cut butter with pastry blender or two knives method till crumbly.
Beat egg with 1-2 tablespoons heavy cream, add to dry ingredients. Add dried fruit, such as currants, chopped apricots, craisins, almonds, cinnamon and walnuts, or mini chocolate chips, semi-sweet are nice, and greadually add 5-7 tablespoons heavy cream. The mixture should be slightly sticky. Mix till it forms a dough, I start with a wooden spoon and then use my hands (just washed and clean of course!) knead gently about 10 times....drop spoonfuls of your desired size on an ungreased cookie sheet, cook in 400 degree oven, cook about 10 to 14 minutes, your oven time may vary. Enjoy them warm from the oven. If you have any leftover, you can warm them up in the oven for a few minutes and they will freshen up nicely. They also freeze well, take them out and thaw in fridge overnight, warm in oven at 400 degrees, for aobut 5 minutes or so.

omg tobey i LOVE your scones!! they are SOO good!! its one of the things i look foward to every year when we come up on the 4th. im going to take this recipe with my when i make breakfast at my girlfriends house. really blow her and her moms mind :-D
