Strawberry BreadFiled under: Baked Goods, Baked Goods - Quickbreads, Fruits - Strawberries. Description: A very moist, sweet bread. Serve with whipped cream cheese. Ingredients: 1 1/2 cups fresh strawberries (or 1 10oz. pkg. sweetened frozen strawberries, thawed) 2 eggs, beaten 1/2 c. + 2TB. Vegetable oil 1 1/2 c. flour 1/2 t. baking soda 1/2 t. baking powder 1/2 t. salt 1 1/2 t. cinnamon 1/2 c. chopped pecans 1 c. sugar Directions: Mix together undrained strawberries, eggs and oil. Set aside. Sift together dry ingredients and add to strawberry mixture, reserving about 1/2 cup. Stir to blend well. Stir nuts into reserved dry ingredients and add to batter. Pour into a well greased and lightly floured 9" x 5" loaf pan and bake at 350 for approximately 1 hour (until toothpick inserted comes out clean). Cool 10-15 minutes and then remove from pan. "Yummy! (with a few revisions)" I had leftover strawberries that were turning south and needed a quick fix to save them. I stumbled upon this recipe online and am so happy with the results. I used coconut oil instead of the veggie oil, 1/2 c of maple syrup instead of sugar, and ground oats and almonds (homemade with a quick blend in the magic bullet) for the flour.
