Royal Mexican Wedding (christmas) Cookies




Description:
These cookies are created as they were made for Mexican families of royalty. Usually only prepared for special weddings and for Christmas. Passed down into our family in 1877

Ingredients:
1 Cup real salted butter
1/3 Cup white sugar
2 Teaspoons distilled water
2 Teaspoons real vanilla extract
2 Cups self rising flour
1 Cup minced almonds
About 1 Cup powdered confectioners sugar

Directions:
Cream the butter and the sugar; add water and vanilla. Sift the flour and then blend together with the almonds and the butter mixture. Chill for three hours in the fridge, then shape into 3/8 inch silver dollar sized cookies. Bake the cookies on a non greased cookie sheet for about 20 minutes at 325 degrees Fahrenheit. Remove the cookies from the pan, cool and roll in the confectioner's sugar.

I grew up eating these style of cookies in Guadalajara! This recipe is as good as they get! Excellent!
