Poached SalmonIngredients: 2 lb wild sockeye salmon 1 cup good white wine 8 cloves of garlic, halved mixed dried herbs (rosemary, thyme, basil, oregano) 3/4 cup capers, drained Directions: Fill a pan with 1/2 inch water and the wine. Add the garlic, herbs and capers. Simmer gently for 5 mnutes. Add the salmon and continue to simmer, covered, for about 10 minutes, turning once. It should be cooked to medium rare. Serve with the garlic and herbs on top.
