Pecan Pie Muffins


Description:
Quick and Easy Muffins

Ingredients:
1 cup coarsely chopped pecans
2/3 cup white sugar
2/3 cup brown sugar
1 tsp vanilla
2/3 cup melted, cooled butter
1/2 cup flour
2eggs
1/2 tsp baking powder

Directions:
In a large bowl, mix butter, white sugar and brown sugar until completely mixed. Add eggs and vanilla. Mix until incorporated, add flour and baking powder. Mix until incorporated. Bake in 350 oven for about 23-25 minutes. Make sure that you use muffin liners!!! These are wonderful served warm. They will keep for a couple of days and can also be frozen. Makes 10-11 mufffins. (tell them that you had to taste test one to make sure they came out right.)
