Peaches & Cream CroissantsDescription: Delicious peach filled croissants Ingredients: Cut 4 - 6 croissants in half 4 eggs, beaten 1 cup half-n-half 1 teaspoon vanilla 1 cup pecans, crushed 4 - 6 peaches, peeled and sliced 1 tablespoon cinnamon 1 cup brown sugar 3 tablespoons butter Maple Syrup Directions: Whisk eggs, half-n-half and vanilla. Pour in a greased baking dish. Soak croissants open in eggs and milk mixture turning once. Leave in refrigerator overnight. Next morning mix cut up peaches, cinnamon, brown sugar and butter together. Stuff each croissant with cinnamon and peaches mixture. Sprinkle pecans on top. Bake 20 minutes at 350 degrees. Remove from baking dish, pour maple syrup over top and serve. Delicious!!! "OMG! Try this!" Okay, I was not sure about this but gave it a try. Made one mistake which actually ended up, I think, being fine. I put about 3/4 of the pecans in the mixture instead of sprinkling on the top. MMMMMMMmmmmm... I also used 10 mini wheat croissants, the perfect amount. I paired it with 4 mini quiches on each plate and some fresh raspberries for garnish, put the maple syrup on the table, but feel personnally that it is sweet enough without it. Leave it as an option. I did sprinkle a bit of the pecans on top but think it doesn't matter really if they are in the mixture.
