Lemon Delight Bread


Description:
This qualifies as the most lemony lemon cake ever. Very good served at tea time.

Ingredients:
Lemon Delight Bread (Gingerbread Mansion) - VERY EXCELLENT!!

1/2 cup "butter flavored" shortening
1 cup sugar
2 eggs, slightly beaten
1 1/4 cups sifted all-purpose flour (sift before measuring)
1 tsp baking powder
1/2 tsp salt
1/2 cup milk
1/2 cup finely chopped nuts (optional)
Grated peel of 1 large lemon

Juice of 1 lemon
1 1/4 cup powdered sugar

Directions:
Cream the shortening with 1 cup sugar; mix in the eggs. Sift flour again with baking powder and salt. Alternately add the flour mixture and milk to the shortening mixture, stirring constantly. Mix in the nuts and lemon peel. Bake in a greased 5x9-inch loaf pan in a 350 degree oven for 1 hour. Remove from the oven, poke holes in the top with a fork. Combine the lemon juice with the powdered sugar; spoon some of the sugar mixture over the bread, drizzling it... be careful not to make bread soggy... repeat 3 or 4 times, waiting 20-30 minutes
