Lamb And Lion's Brown Sugar Cinnamon Scones

Filed under: Baked Goods, Baked Goods - Scones, Breakfast, Brunch.

Description:
They're Sconalicious!

Ingredients:
3 c all-purpose flour
2 1/2 tsp baking powder
1 c light brown sugar -- (not dark brown)
1 c butter
1 1/2 teaspoons cinnamon
1 c milk

Directions:
In a large bowl stir together flour, baking powder and sugar. Cut in butter until the mixture is like coarse meal. Add milk and stir until sticky dough forms. Divide dough into 3 equal portions. With floured hands and on a floured surface, pat each into a circle about 3/4 to 1 inch thick. With a sharp knife, cut each dough circle into 6 wedges. Place on ungreased baking sheets. Bake at 375 F and bake until golden brown and a toothpick inserted in the center of one comes out clean.
Note: I find that sometimes a little more or a little less milk may be needed, probably related to the moisture content of the flour. Leave space between these since they tend to spread a little while baking.

"Not bad, but..."
Tried this recipe yesterday attempting to please my significant other. These scones weren't bad, but I had several problems with the recipe. Admittedly, at least one of these was my own fault. My biggest problem was the fact that they tasted... flat. I think this comes from a lack of salt in the recipe. I know from previous experience that biscuits and bread baked without salt just taste dull. I think that was the problem here. I recommend adding about 1 teaspoon salt with the dry goods prior to cutting in the butter. As for the dough, I attempted to make rough "drop scones" to avoid the hassle of rolling out the dough. They ended up spreading out quite a bit while baking, which is my fault for either letting the butter get too warm or adding too much milk to the dough. Err on the dry side when making these. I'll give it another shot with my revisions, as I think the recipe has potential.
