Hopi Blue Corn Pancakes


Description:
These light pancakes are made from Hopi blue cornmeal available in southwest specialty stores or online. Blue cornmeal has a nuttier flavor than yellow cornmeal and a coarser grind.

Ingredients:
1 C Blue corn meal
3/8 C AP Flour, unsifted
1 Tbs Baking Powder
1/4 tsp Salt
1 Tbs Sugar
2 Tbs Butter, melted
2 Eggs
1 C Milk

Directions:
Mix all dry ingredients together. In separate bowl, beat eggs and milk. whisk in melted butter. Add liquid ingredients to dry and mix until almost lump free. Do not over mix. Let stand at least 15 minutes before cooking. Batter will be thin. Cook on preheated griddle until lightly browned on each side.
