Ham & Broccoli Souffle

Ingredients:
1/2 cup (1/4 lb.) butter
10 eggs
1/2 cup all-purpose flour
1 tsp baking powder
1/4 tsp salt
2 cups large-curd cottage cheese
2 cups shredded cheese (we use cheddar)
1/2 cup chopped onion
1 cup chopped broccoli
1/2 lb. chopped ham
1/2 cup fresh parsley, chopped (optional)

Directions:
Melt 2 Tbs butter and sauté onions and broccoli. Whip eggs until fluffy and add flour, baking powder, salt, cottage cheese, remaining butter (melted), and half the shredded cheese. Mix well. Add onions, broccoli, ham and parsley. Combine.

Place mixture in greased 9"x13" baking dish. Top with remaining shredded cheese. Bake at 350 degrees for approximately one hour, or until the top is lightly browned.
