Green Chile Cheese Souffle


Description:
Prepared the night before, this souffle serves twelve, and can be scaled for even larger groups. It's easy and delicious.

Ingredients:
* 12 slices of bread, with the crusts trimmed
* 9 eggs, well beaten
* 3 cups milk
* 1 1/2 T. oil
* 1 t. salt
* 1/2 t. pepper
* 1 cup grated sharp cheddar cheese
* 1/2 cup chopped frozen green chile (medium hot)

Directions:
Cut bread into cubes. Combine eggs, milk, oil, and seasonings, including green chile. Stir in cheese. In an ungreased 2-quart souffle dish, alternate bread cubes and egg mixture. Cover, and refrigerate overnight. Bake at 350 degrees for an hour and ten minutes, or until puffed and brown.
