Fresh Ginger Cookies


Description:
Soft and spicy, tangy and delicious, these are a favorite for the Holidays! They are also made with canola oil rather than butter or shortening for a heart-healthy treat.

Ingredients:
1/2 c. coarsely chopped fresh ginger
1-1/2 c. pure canola oil
3 c. sugar
3/4 c. molasses
3 eggs
1-1/2 tsp salt
1 Tbsp cinnamon
5 tsp baking soda
3/4 tsp ground cloves
7 c. flour

Directions:
Preheat oven to 350 degrees. Mix the fresh ginger with the oil in a food processor until well minced. Blend 3 c. sugar, molasses and eggs. Add the oil and ginger mixture and blend until smooth. Mix the dry ingredients and add to the wet mixture, blending well. Line cookie sheets with parchment paper or aluminum foil. Roll dough into balls about 1 inch and roll in sugar. Bake until the tops crack and the cookies are set, about 11-12 minutes. Cool on wire racks and enjoy!

"too much soda?"
I would half the soda in that one could taste it in the final product. I got complements anyway from children I thought would not care for the flavor of ginger. I also used Splenda instead of regular granulated sugar. The ginger I used was the fresh boiled ginger left over from making ginger tea. Too much soda however,2 1/2 t is enough I would suggest.
