Ellie's Eggs


Description:
Before becoming innkeepers this was our family's favorite dish on Christmas morning and it can be made the night before and warmed up.

Ingredients:
2 tablespoons butter
1 bunch of green onions
1 pound Canadian Bacon
1 dozen eggs
1 can drained mushrooms (may use fresh)
6 slices of break
Sauce:
4 tablespoons butter
4 tablespoons butter
Small package Velvetter cheese

Directions:
Brown green onions in butter. Add bacon, eggs and mushroomsl Cook until eggs are soft and done. Dice bread into cubes. Layer egg mixture and break in a 9x13 Pyrex. Mix ingredience for sauce and cover casserole.
