Eggs PiquantDescription: A zesty egg with tangy but delicious flavor. Ingredients: 2/3 cup mayonnaise Dash Salt 1/8 tsp.of pepper 1 tsp. of Worcestershire Sauce 1 tsp. of minced onion 1/4 cup milk (usually requires a dab more for good smooth sauce) 1 cup New York Cheddar Sharp finely grated 1 bag of baby spinach washed and dried 6 eggs or (12 if two eggs each desired) Directions: butter six custard cups or ramekins.In a saucepan combine the mayonnaise, salt,pepper and worcestershire sauce and onion. Add milk gradually blending until smooth. Add the cheese and cook slowly over low heat adding milk as needed to obtain a good consistency for about 5 mins(suitable for eggs to cook in) Spoon a small amount in the bottom of the custard cups or the ramekins then 3 tablespoons of cooked baby spinach.(Steam or boil the spinach to cook) Add two eggs. Add a sprinkle of the remaining grated cheese or breadcrumbs are a wonderful alternative.
