Fresh Pear CakeDescription: This recipe is great for apples or pears. Ingredients: 1 cup flour 1/2 tsp salt 1 tsp baking soda 2 cups of cored and peeled pears 1 egg 1/4 cup vegetable oil 1 cup sugar 1 tsp ground cinnamon 1/4 tsp nutmeg 1/2 cup chopped nuts (pecans or walnuts are great) Directions: In a small bowl, sift together the flour, salt and baking soda and set aside. In a medium size bowl, place the diced pears and break the egg over the fruit. Add oil, sugar, spices and nuts. Stir in the flour mixture until moist (it will seem dry). Spread into a greased 8 inch square baking pan. Bake at 350 degrees for 40 to 45 minutes until a toothpick comes out clean. Let stand for 10 minutes in the pan before cutting.
