Delectable Strawberry & Dark Chocolate Stuffed Pancakes

Want a special dish for a romantic Valentine's morning candlelit breakfast? Treat your sweetheart and yourself to these melt-in-your-mouth delicious dark chocolate, strawberry stuffed pancakes. This dish says "I Love You" in one plate.

Ingredients:
Chocolate Sauce:
1/2 cup Dark Chocolate Chips
1/2 cup Milk Chocolate Chips
2 Tbspns Whipping Cream

1 1/2 cup strawberries, cut in slices
Extra whole strawberries, washed and dried

Make chocolate sauce first. Dip extra strawberries into sauce. Place on wax paper and put in refrigerator to harden.
To make Chocolate Sauce:
Combine chips and whipping cream in microwavable bowl. Microwave on medium power at 30 second intervals, stirring in between, until chips are melted. Stir until smooth. Serve warm.
Pancake Batter:
1 cup Bisquick
1/3 cup Ricotta Cheese
1/3 cup milk
1 egg
Cream Cheese Filling:
1/4 cup Cream Cheese
1 Tbspn sugar
Strawberry Syrup:
1/2 cup Polaners Fruit Only Strawberry Jam
1/4 cup maple syrup

Directions:
Pancakes:
Mix Bisquick, ricotta cheese, milk, egg until smooth. Spray heart shaped pancake molds with Pam and place on heated griddle. Fill with batter and top with sliced strawberries. Flip when ready and remove from griddle when done. Remove pancakes from molds.
Cream Cheese Filling:
Microwave cream cheese until soft. Add sugar and stir until smooth.
Strawberry Syrup:
Combine jam and maple syrup in small saucepan. Heat until jam has melted. Pour into blender and blend until smooth. Return to saucepan and heat through. Serve warm
To assemble:
Make strawberry sauce. Make pancake batter. While pancakes are cooking, make cream cheese filling. Place one pancake on plate, top with cream cheese filling, a small amount of chocolate, and strawberry slices. Place another pancake on top. Continue to layer until stack is as tall as desired. Drizzle with strawberry syrup and chocolate sauce. Top with a few strawberry slices. Garnish the plate with chocolate dipped strawberries.

"Yummy"
This recipe for a post-menopausal woman like myself is a 5, a very large 5! Not being a fantastic cook, I found the recipe and instructions surprisingly easy to do and follow. And it did not take as long as I suspected it would. My breakfast guests all enjoyed it and have promised to treat me to a stay at the Mountain Rose Inn so I can experience this treat without having to make it myself. Chocolate for breakfast: what child or woman wouldn't like it!
