Cranberry Relish Muffins


Description:
We always serve Cranberry Orange relish with turkey or chicken, and we always have leftovers. This nice muffin uses up the rest!

Ingredients:
1/2 C. Cranberry Orange relish
1 and 3/4 C. flour
2 Tbsp sugar
2 and 1/2 tsp. baking powder
3/4 tsp salt
1 egg, beaten
3/4 C. milk
1/3 cup oil
4 Tbsp butter, melted
1/4 C. sugar

Directions:
Sift together the flour, 2 Tbsp sugar, baking powder and salt. Combine the egg, milk and oil. Add to the dry ingredients, and stir until moistened. Spoon half the batter into 12 paper lined muffin tins. Add 1 tsp. cranberry orange relish to each. Fill with remaining batter. Bake at 400 for 20-25 minutes. Remove from oven, dip tops into melted butter, and sprinkle with sugar.
