Chocolate Ricotta MuffinsFiled under: Breakfast - Muffins, Romantic Recipes. ![]() Description: Rich chocolate muffins are delicious with coffee. Ingredients: Dry Mix: 2 1/3 Cups Flour 1 Cup Sugar 1/3 Cup Cocoa Powder 2 Tsp. Baking Powder 3/4 Tsp. Salt 1 Cup Chocolate Chips Wet Mix: 1 1/3 Cups Milk 2 large eggs 1/4 Cup Olive Oil 1 cup ricotta cheese 1 tsp. Vanilla Directions: Preheat oven to 375 degrees. In a large bowl, combine dry mix. In a medium bowl combine wet mix until smooth. Fold wet mixture into dry mixture until blended. Scoop batter into muffin tins. Bake 25 minutes or until pick inserted in center comes out clean. "incorrect time and temperature" The times and teperature are incorrect. The original recipe comes from Mollie Kratzen's Sunlight Cafe cookbook. Bake at 350 for 12-15 minutes.
