Blueapple Pie

Description:
Also called "Bluebapple" pie Premiered at the Blue Hill Maine State Fair, 1997. We serve it for teatime, ala mode with French vanilla ice cream. Available for a late nite snack in the privacy of your room. Sexy blue colors and loaded with antioxidents!

Ingredients:
1 small bag (8 to 12 ounce) frozen blueberries, wild Maine type (like the cook)
1/2 can apple pie mix
1/3 cup sugar or other sweetener
2 Tbls instant tapioca mix
1/4 tsp each nutmeg & cinnamon
pie crusts, frozen or from scratch.

Directions:
Place apples into pie crust. Mix tapioca, sugar and spices with blueberries and pour over the apples. Fill to the brim but don't over-fill, rub a little butter and egg white on the crust.
Seal the top crust as tight as possible and poke a few fork-holes. Bake at 350 degrees.
Note: vary ingredients to suit taste and the size of your pie plate. Rub a little butter and/or egg white to the crust to give it a tasty pie-patina.
