Banana Bread

Description:
Sometimes Country Inn breakfast, usually baked just for fun and set out with the other sweets for nibbling throughout the day. Mountain Lodge horse back riding and hiking takes energy! This hearty snack will help you get through your adventure vacation.

Ingredients:
2 Cup Flour
1/2 Cup Sugar
1 Tsp Baking Powder (Adjust this for your altitude or lack of altitude!)
1/2 Tsp Baking Soda (Adjust this for your altitude or lack of altitude!)
1/2 Tsp Salt
1 Tsp Cinnamon
1/2 Tsp Nutmeg

2 Large Eggs
1/3 Cup Veg Oil
1/4 Cup Milk
1 Tsp Van Extract

1 Cup Applesauce or Mashed Banana

Optional:
1 Cup Choc Chips

Directions:
Mix dry ingredients.
Mix wet ingredients.
Mix them together – do NOT over mix!
Into pan, not more than 2/3 full.
Bake until golden brown and toothpick comes out clean.

Cook Time: Loaf 45-50 minutes; Muffins 10-12 minutes, Mini-muffins 8 minutes
