Baked Apple Pancakes


Description:
This recipe is a favorite! Plus Southern Living did a sampling of our recipes in their November 2004 issue. This was one of our recipes they selected to feature.

Ingredients:
8 Eggs
1 1/2 cups buttermilk
1 cup plain flour
3 Tablespoons sugar
1 teaspoon vanilla
1/2 teaspoon cinnamon
1/3 Cup butter
6 Granny Smith Apples, peeled and sliced
8 Tablespoons brown sugar
1/2 cup chopped pecans
Confections sugar for garnish
Vanilla Bean Ice Cream
Smuckers Carmel Topping & additional chopped pecans

Directions:
Mix eggs, flour, sugar and cinnamon together till smooth (may be a little lumpy).
Add milk and vanilla & whisk. Melt butter in a 9” x 13” prepared baking pan. Place sliced apples in pan and return to oven until butter sizzles (about 5 minutes). Remove from oven and pour batter over apples. Sprinkle with Brown Sugar and pecans. Bake in preheated 425 oven for 20 – 30 minutes. Pancake will raise high on sides and middle like a popover. Remove from oven and dust with Confections Sugar. Place servings on plates and then add scoop of Vanilla Bean Ice Cream. Drizzle with Carmel topping and sprinkle with chopped pecans. Serve IMMEDIATELY. We bake this recipe in individual oval baking dishes. Divide the ingredients equally amoung 8 dishes and after adding the batter to the apples, bake for only 20 minutes.

"A BIG HIT!"
I saw this recipe in Southern Living and decided to try it. It was a big hit with my adult friends. Their teenage girls loved them. They were delicious!
